Description:
Camp Choconut is a Boys' residential camp for ages 9 – 15 founded in 1896. Our 88th season will be a six-week session from June 23 – August 4, 2012. A concurrent three-week session is available from June 23 – July 21, 2012. We are a wilderness camp of 55 boys on a private lake in the middle of 800+ acres, a safe place for boys to explore in a clean, natural setting under the supervision of counselors who are carefully chosen as good role models. Our program is designed to build the whole boy, establish a sense of self-awareness with one's surroundings, and develop character in a safe, secure environment - all while having fun.
CAMP CHOCONUT MISSION
The mission of Camp Choconut is to promote the highest standards of creativity, responsibility, confidence, independence and reliance in one’s surroundings and abilities through the teaching of outdoor living skills and, to instill in young people an awareness of nature's important role in the enrichment of the human spirit.
Qualifications:
The Head Cook must be an exceptionally responsible and highly motivated person with a degree in cooking, kitchen management or several years experience in preparing meals for large groups on a daily basis. He or she should possess a working knowledge of food ordering, meal planning, budgeting, and implementing procedures accepted by the health department. Experience in supervising the operation of a kitchen and its staff is essential.
Salary/Benefits:
Compensation for the right person $400 - $500/week, dependent on experience - plus room and board, 1 day off a week, time off every day.
Responsibilities:
Create 3 delicious meals a day, including a vegetarian and/or vegan entree when meat is served and awareness of food-allergies among campers/staff. Order food and supplies in a timely fashion to meet the needs of the kitchen. Consult with the Camp Director on budget and adjust spending as required. Inform the Camp Director and assistant in a timely fashion of any scheduled pickups or food purchases. Plan a weekly menu with the approval of Camp Director. Develop a routine for the kitchen's operation that delineates the responsibilities and tasks of the crew. Supervise kitchen crew in co-ordination with the Assistant Cook. Prepare all meals or direct their preparation, including desserts. Assist program staff in preparing food for special events, opening day, parent’s day and evening counselor supper (snacks). Arrange for a regular schedule of usage, maintenance, and cleaning of all kitchen surfaces and equipment in keeping with the regulations ServSafe Guidelines. Oversee all kitchen staff in the safe and appropriate operation of kitchen equipment and use of utensils. Inventory all food, kitchen equipment, eating utensils, etc. at the end of the summer. Arrange for the proper disposal or give-a-way of unopened food at the end of the summer. Make the kitchen a welcoming place that nurtures campers and staff alike.
The cook sets the tone for the kitchen. The kitchen is considered to be an important area of camp, one that adds to the nurturing of campers and staff. The cook should be capable of setting a tone for the kitchen's operation that is safe and efficient, while ensuring that it remains a warm and welcoming place. He/she should have experience working with other people in a supportive, co-operative fashion. Most importantly, he or she should love to cook great food. Experience preparing delicious meals for vegetarians is a big plus.
